Classic Vegan Chocolate Cupcakes

In France, the last Sunday of May is celebrated as Mother’s Day. We can’t think of no better way to celebrate it than preparing our super easy vegan chocolate cupcakes recipe. These little packages of yum will delight the whole family :)
Ingredients
For the Classic Vegan Chocolate Cupcakes:
- 1 and 1/2 cups (188g) All Purpose Flour
- 1/2 cup (43g) Cocoa Powder (Unsweetened)
- 1/2 cup (100g) White Granulated Sugar
- 1/2 cup (100g) Light Brown Sugar
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup (240ml) Soy Milk
- 2 tsp Vanilla Extract
- 1/3 cup (80ml) Canola Oil
- 3 Tbsp Applesauce
- 1 Tbsp White Vinegar
For the Classic Vegan Chocolate Buttercream Frosting:
- 3/4 cup (170g) Vegan Butter
- 3 cups (360g) Powdered Sugar
- 3/4 cup (63g) Cocoa Powder (Unsweetened)
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 2–3 Tbsp Soy Milk
For Decoration:
- Grated vegan chocolate shavings
Cupcakes are really easy to prepare because unlike cakes they bake super fast! You will definitely love these vegan cupcakes for they spongey and light texture and mix of flavours.
